Mediterranean Salad Dressing

Put 1/2 cup fresh lemon juice in the Vitamix

Add: 1 tsp sea salt

1/2 tsp white pepper

1/4 tsp dry mustard powder (this is an emulsifier and breaks up the surface tension of the ingredients.  Meaning, by adding the dry mustard, your dressing will not separate but hold together in the creamy form.)  This small amt of dry mustard is not enough to make the dressing taste “mustardy”.

1-2 cloves pressed garlic

1/2 cup chopped onion  (I chop it but probably unnecessary w/ the Vitamix!)

 

Turn on and blend till all ingredients are properly broken down then add:

1 full cup of Grapeseed oil, by slowly drizzling it into the top while Vitamix is running on level 7.  While you slowly drizzle this, you will notice it begin to thicken.  By the time you finish adding the full cup of Grapeseed oil, your dressing is creamy, thick and ready to put into your storage container!  NOTE:  Depending on the individual lemons, you may want more tartness, just add a little more lemon juice or you could even add a little vinegar.

 

Walah!  Easy peasy!  My husband whines when we run out of this dressing!
